Carol Jansen
Carol (Carolyn) Jansen of Golden, CO, passed away Dec. 9, 2025 at the age of 87.
Carol was born Jan. 5, 1938 in Stuart, to Wes and Vivian Cobb. As a child Carol enjoyed riding Shetland ponies, tap dancing and playing in her playhouse which was a gift from her parents on her fourth birthday.
In high school she competed at rodeos in barrel races and continued to tap dance.
Carol met Chuck, the love of her life on a blind date. Three years later they were married. To this union were born three children: Wayne, Jody and Casey.
Carol worked with her husband on the farm for two years, then they owned and operated a grocery store and meat processing business in Stuart for seven years.
In 1964 Chuck and Carol purchased Herbst Drive-In in Aurora, which came to be known as Chucks Drive-In. After 34 years they sold the drive-in and Carol worked part-time for Eberly Trucking, BKH Popcorn, Schneider’s Hardware and East Park Villa before her retirement in 2011.
Carol was a member of Faith Community Church in Aurora, and active with many support groups. She enjoyed traveling, whether in a car, airplane or semi-truck. She loved spending time with her children, grandchildren and great-grandchildren.
Carol found joy in exercising the gifts God so blessed her with, from wallpapering to interior painting, sewing, baking, organizing and decorating.
She is survived by two children: son and daughter-in-law Wayne and Mary Jansen of Colorado and daughter and son-in-law Jody and Dale Moore of Aurora; grandchildren Amber Rossiter, Jake Jansen, Justin Jansen and Lacy Moore; great-grandchildren Tyler and Emma Burkett, Sophia Romero, Camden and Juniper Jansen and Ryker Jansen; two brothers Skeet (Darrel) and Ty (Terry) Cobb.
She was preceded in death by: husband Chuck (2019), son Casey Jansen, grandson Levi Moore, parents Wes and Vivian Cobb, sister-in-laws Leola Cobb, Dorothy Cobb, Evelyn Skrdla, Mary Cathern Estes, Mary Ann Jansen, Irene Cobb and Edith Kunz; brother-in-laws Ed Jansen Jr., Ray Estes, Lawrence Skrdla, Burt Kunz and Larry Cobb.
Her fervent prayer was that each person who crossed her path in life on earth would come to except Jesus Christ as their personal savior.
In lieu of flowers or gifts Carol asked that memorials be to the family to be donated at another time in her name.
A celebration of our mother’s life will be at Higby-McQuiston Mortuary in Aurora after the first of the year. She will be buried beside Chuck and Casey at a later date in Atkinson. A family service to be scheduled at a later date.
