Sarah Martin is on a mission to share a new green option with Grand Island, Aurora and Phillips. Through her business, Third Day Microgreens, she is offering four varieties of microgreens delivered to the three communities every Friday.
“Third Day Microgreens is the business that I started in December of 2019,” she said. “It was brought to life with a personal need and a passion for access to really fresh produce.”
Named after the biblical reference of the third day where God created plants, she noted that it is to give credit to the one who created the plants that she grows.
She described microgreens as tiny, edible vegetable or herb plants that come between sprouts and baby greens.
The choice of microgreens came after Martin was diagnosed with fibromyalgia in 2012. She did research about cuisine that would have more health benefits.
