For the past few years, Jace and Kendra Hudson have been bringing the massive beasts of the prairie right to the plate of Nebraska consumers and beyond. The Hudsons’ business, Central Nebraska Buffalo, has been processing and shipping out prime bison meat, a venture that utilizes a family legacy to provide a beef substitute.
