Husker Harvest Days drew a crowd for three days last week, each bigger than the one before, welcoming all to one of the largest farm shows in the state of Nebraska. 
As part of the Wednesday lineup, executive director of the Nebraska Beef Council Ann Marie Bosshamer spoke to the changing consumer trends related to beef. 
“The first thing I wanted to talk to you about... is consumer trends in buying beef,” she began. “We always know in retail and food service, the two channels that are sold through, normally it’s very even. And food service has always been a little bit more than retail. But you can see, with COVID, things changed a little bit and now we’re starting to level off.”
If what they project is correct, she continued, trends should be back to normal by 2023.
