Edible plants found throughout Nebraska
Webinar shares what local greens are good to eat
When talking about things that grow which make a tasty treat, many people think of fruit and vegetables, but Bob Henrickson, a horticulture program coordinator for the Nebraska Statewide Arboretum shared in a Conservation Nebraska webinar that there is more than meets the eye when it comes to Nebraska plants.
Henrickson has been working with the abroteum for 20 years and has found that “plants are medicine and medicine is plants.”
“When you think of wild edible plants, they are often thought that they must taste like cardboard,” he began. “No, this is a product that rivals the gourmet fare of anywhere in the word.”
Henrickson reports that many of these plants are not only nutritional, but delicious as well. Some of them are overlooked and can be found right under a person’s nose.
First off, he explained that people need to pay attention to the time of year when foraging for wild edible plants.
“Each season is important in your learning,” he said. “It really increases your awareness and understanding of wild things and helps you make great choices that sustain us and don’t impede the natural systems.”
